Right now I want a strong flavored hot drink, but I’m all full up on caffeine and looking for something hearty without caffeine. Homemade chai is the perfect solution. Plus this drink is festive and goes well in the new year.
I’ve had this caffeine-free recipe since the 1970s, long before chai became popular here in the US. We called it Yogi Tea then. I served this to my daughter-in-law for the first time a couple of weeks ago and she and my granddaughter both loved it. I hope you do too. It’s rich, spicy and warming.
Combine water and spices in a medium saucepan. Boil gently on medium heat for about 20 minutes. Strain out spices. Add sweetener and milk or milk substitute. Serve piping hot.
- 1 quart water
- 16 peppercorns
- 16 cardamom pods
- 12 whole cloves
- 6 slices fresh gingerroot
- 6-7 small cinnamon sticks
- 1/2 cup honey or maple syrup
- 1/2 cup milk, cream or dairy alternative
