Baked Pear Crumble

iStock_000039119544_SmallI have to share this sweet and crunchy dessert we had last night. It’s easy to prepare and pears are starting to come into season.

Ingredients

  • 2 ripe but firm pears.
  • 2-3 TBL olive oil
  • 1/4 cup sliced almonds
  • 1/4 cup pumpkin seeds
  • 2 TBL brown sugar
  • 2 TBL raw regular oats
  • 1 TBL black sesame seeds
  • pinch of salt
  • 1/2 cup mascarpone or sour cream
  • 2 tsp. sugar, honey or maple syrup

Recipe for Pears

  • Preheat oven to 375°.
  • Cut pears in half and gently cut out the cores.
  • Place pears, cut side up on a small baking pan. Drizzle with 2 tsp. olive oil.
  • Bake on the upper rack until soft, about 20 to 30 minutes. Cool slightly.

 Recipe for Topping

  • Toss almonds, pumpkin seeds, brown sugar, oats, salt and 1 to 2 TBLs olive oil
  • Toast until brown on lower rack of oven or in a cast iron pan for 10 to 12 minutes.
  • Turn frequently.
  • Remove from oven and mix in sesame seeds. Let cool.

Recipe for Sauce

  • Whisk mascarpone and sweetener in a small bowl.

Spoon mascarpone onto plates. Place pears on mascarpone. Add topping. Enjoy.
